  • 10g salt (2 tsp)
  • 100g freeze-dried blueberries (1/2 Cup)
  • 15g freeze-dried lemon or zest

Instructions:

  1. In a large bowl, mix the flour and water. Cover and let it rest for 30 minutes (autolyse). **This step is optional.
  2. Add the sourdough starter and salt to the dough. Mix until well incorporated.
  3. Gently fold in the freeze-dried blueberries and lemon.
  4. Cover the dough and let it rise for 3-4 hours, folding every 30 minutes.
  5. Shape the dough into a loaf and let it proof in a banneton or bowl lined with a floured cloth for 2-3 hours.
  6. Preheat your oven to 475°F (245°C) with a Dutch oven inside.
  7. Carefully transfer the dough to the hot Dutch oven, score the top, and bake covered for 20 minutes.
  8. Remove the lid and bake for an additional 20-25 minutes until the crust is golden brown.
  9. Let the bread cool on a wire rack before slicing.



Blueberry Lemon Sourdough Bread Using Potato Flake Sourdough Starter

Ingredients:

  • Dough:
    • 500g bread flour (4 Cups)
    • 250g water (1 Cups)
    • 150g potato flake sourdough starter (3/4 Cup)
    • 10g salt (2 tsp)
    • 100g freeze-dried blueberries (1/2 Cup)
    • Zest of 2 lemons
    • 50g honey (1/4 Cup)

Instructions:

  1. In a large bowl, mix the flour and water. Cover and let it rest for 30 minutes (autolyse). **This step is optional.
  2. Add the sourdough starter, honey and salt to the dough. Mix until shaggy. You can add blueberry and lemon here or add them in as an inclusion.
     **The mixing in this step can be done by hand or using a stand mixer with a dough hook or with a danish dough whisk.
  3. Place dough in an clean bowl that has been lightly oiled. Cover the dough and let it rise until doubled in size. **I usually let it go overnight. This should take at least 4-8 hours depending on how warm your kitchen is during proofing.
  4. Once dough has doubled, dump out on floured surface and divide in half.
  5. If you are adding inclusions press the dough into a flat rectangle shape and add the freeze dried blueberries and lemon. The fold both sides in to the center. Add another layer of crushed freeze dried blueberries and lemon and fold again making a loaf shape. 
  6. Shape the dough into a loaf pan or shape into a circle for a boule and let it rise until doubled in size.
  7. Preheat your oven to 350°F 
  8. Carefully score the top, and bake for 45 minutes or until the crust is golden brown and the bottom sounds hollow when tapped.
  9. Let the bread cool on a wire rack before slicing.
